The quality of the product is top-notch. To be honest, I didn't even expect it. Very soft and excellent in terms of layer thickness. I was satisfied with the purchase, I will definitely take more.

I felt I was taking a risk on this purchase - no other reviews, pretty attractive sounding product....too good to be true? But I'd run out of back fat and my intent was to make some salami with the trimmings from a pork shoulder after I'd pulled out the coppa. The shoulder itself didn't have the quality or quantity of fat I wanted.The box arrived earlier than expected, and the single piece of (skin-on) fat was shipped with freezer packs and still frozen. Beautiful product - snow white, nearly three inches thick in places, and smooth as cream; felt like I was cutting butter. Good enough for lardo. To top it off, I got more than 7 lbs - it was more like 10.

I received 10.9 lb, instead of 17. But the salo is good.

The ordered piece of backfat was delivered on time in a very good packaging box. The piece had a uniform thickness, was easy to cut with a handsaw. The texture is great - smooth and dense, when salted, it was delicious and went perfectly with rye bread.

Product does have the skin on. Good for making pork rinds. Very good product. Tastes great mixed in with vineson sausage.
