These beans hold up well to the repeated cooking that goes into cassoulet. They are slightly larger than most white bean varieties found in the U.S., and retain a firm texture, assimilate the other flavors of the dish without overwhelming them, yet have a nice flavor independent of other ingredients. The claim that these are from stock that originates in France in entirely reasonable since they are identical in appearance with the Tarbes beans found in Southwest France.We used these for Cassoulet served to friends, some of whom had tried their own recipes with different beans and some of whom had tried the same recipe made with different (American variety) beans: all found the prepared dish to be far superior, and I am inclined to ascribe the results to the beans.

I make traditional cassoulet 2-3 times a year. These bean out perform the other Tarbais beans I've purchase over the years, even from the so called gourmet specialty stores that charge and arm & leg. My new go to bean!

Perfect beans for Cassoulet; since there was 70 dollars worth of duck in it and a whole lot of work involved, it deserved these beans. Next time I will buy 2 lbs, less meat more beans.

baloney they taste like any other bean canned or dry. buy a can of beans in your local market no difference.

These are deliciou!
These dried beans are the best I've ever tasted. They have a smooth pleasant taste and I love to eat them just by themselves with a little butter and salt. Haven't even put them in a casserole yet. Get them. You'll enjoy them.
