Sencha contains more of the beneficial nutrient Catechin than other green teas as it's grown in full sunlight, becoming yellowish green in colour. Using only the young leaf sprouts of spring ensures our Sencha Premium's aroma and taste is much more mellow and refreshing. These young leaves are difficult to find even in Ichibancha (the first pick of the year). Although generally the best time to gather tea leaves is when the tea tree has five sprouts, our Sencha Premium's tea leaves are gathered when the tea tree has only three sprouts. It is said that because the sprouts are younger the tea is of premium quality. Finished in the traditional Uji/Kyoto style. How to Prepare Sencha (2cups) Tea leaves: 1 tablespoons (7 - 8g) Water temperature: 80°C (176°F) Amount of water: 200ml Waiting time: 1min. All YOI teas can be brewed three times with full flavour.
