You will need to keep fermenting for an additional 2 weeks tho, I didnt use a secondary fermenter and it was perfect.

When would be the right time to be ready to drink this beer since you say aging it brings out the flavor?

I make 5 , 5 gallon batches at a time. That being said Before I start to drink any of them. They have been finishing in kegs for at least 8 to 16 weeks They are always good from start to empty by that time. Enjoy. And never rush your beer.
