Do I need to cut off the power when installing the transformer?

technically yes, as the main wires from the house are hot. I didn't. I just replaced one wire at a time when replacing the old transformer so there was only ever one house wire exposed at a time. Worked great.

Will the doorbell transformer make a lot of noise when it is working?

There is no hum or transformer noise and it’s been running for 2 months
