Q: Is this vanilla glutin-free? I love it, but am not sure and need to make gluten-free cookies for my friend.

Vanilla never contains gluten. Gluten is a part of grain (flour) complexes. It's like going to the gas station and asking if the gas contains milk.

Q: does it contain any alcohol or sugar?

It contains alcohol but no sugar. Vanillin IS NOT pure vanilla extract. Vanillin is the pharmaceutical name for artificial vanilla.

Q: what quantity equals regular real vanilla in baking

I like to use a bit extra in baking, but generally you can use it the same as regular vanilla. I have found the taste and aroma of this vanilla blend to be very rich and appealing. It is not weaker than regular vanilla, so there is no need to adjust the measurement.

Q: Did it used to contain coumarin?

No. Some Vanilla Extracts from Mexico formerly were extracted from Tonka Beans which contains this potent anticoagulant. This is now prohibited by Mexican Law.
