Q: Can you use this one for canning small jars? pints or smaller?

it is possible i guess if you threw a hand towel in the bottom but without a rack the jars would move around and bump each other and probably break. i wouldnt advise it.

Q: does it have a rubber seal at the bottom of the cover?

where do I buy rubber seal at the bottom of the cover

Q: When the steam builds up, and there is water in the cooker, will it splatter the water out from the pressure valve?

When I used mine a lot of steam shot out from the pressure value but I saw no sputter spatter along with the steam.I have only used it once though.

Q: The photo looks like adjustable pressure. What is the psi of the settings?

1= Low pressure level 7.3 psi2= High pressure level 13.1 psi
