Speedy cooking
Always intended to buy an instant pot but put it off because I was accustomed to using a stove top one that would obtain a 15psI pressure & cook faster than electric ones which don't. But I discovered that this Instant Pot Max model does ! The only one in their line that does. Tested it out & indeed it does reach 250 F or 15psi. Very happy about that. The controls are also much easier on this MAX model to navigate & understand. Very simple. The only downside is that the so called silicone sealing ring had a toxic plastic smell to it after completing two 15 min water tests with it. Silicone is supposed to be odourless. So I ordered two different types of sealing rings that claimed to be genuine silicone & tested them out too & found the same thing. Horrible plastic smell. So I researched this problem & found a solution. If you bake your new silicone rings in a 350 degree F oven for 1 hour, it will take away that odour. For the colored off brand rings I bought as a replacement after the warranty is up, I had to bake them for two hrs at that temperature to completely remove the odour. So now I'm happy that I can use my new pressure cooker without any toxic smell to the sealing ring. Hope this solution helps someone else. Very pleased with this MAX model even though it was pricier than other models in the line. But the higher cooking pressure made it worth it & the simpler controls was a bonus.

Easiest, Most Advanced Automatic Canner
Most canners only show you what the pressure is inside the canner. What is MOST IMPORTANT, however is the TEMPERATURE at a sustained high pressure. The high pressure is pre-set to 15 PSI. Pressure drives temperatures above the boiling point, to above the 240 degrees necessary to kill botulism. It must be sustained for a given period of time determined by the USDA. The Max shows it’s internal temperature the entire time it is running in the canning operation. If it should drop unexpectedly, it will stop working and flash it’s display until you fix it. For those who can’t handle the weight of a big stove top canner or don’t want to can foods in quarts, this is a great countertop addition to the kitchen. Four pints at a time gives me the right amount of canned food to enjoy right away and have extra on the shelf for later. I can take advantage of sales and don’t have to worry about power outages and losing a freezer full of food. It provides a quick, easy meal with only a warm-up needed when I’m too tired to cook from scratch, and ready-cooked meats for dinner or for my husband to take to work. I have not yet even tried sous vide function, but I will certainly be making bone broth soon. This is a wonderful companion to my regular Instant Pot Duo, both of which are very much welcome in my kitchen. I am legally blind, but I can still safely use these products. They are a joy to own and use.

Instant Pot Max compared to a Brand-x competitor.
I had a sort-of knock-off of the Instant Pot for two years. I replaced it with an Instant Pot Max. Here are my notes, comparing them. I am not affiliated with Instant Pot in any way except being a user who can type.a) I had a Deni-brand pot, claiming to do many of the same things, and it did indeed do many basic things just as well. The Instant Pot Max does more than just saute, boil, steam and pressure-cook. It is very broadly programmable, but also has many neat one-button modes such as yogurt-making, etc.b) It it has simple point-and-shoot modes, plus optional variants of those modes, plus wholly-custom ways of doing everything the way you want, across the board. The Instant Pot Max controls are very much touch-screen oriented; use it a few times, and you start to feel confident. For instance, it has English Language display text for reporting alarms or errors, not just some obscure icons. This cost them more to do, but since "smart-pots" can get bewildering, Instant Pot Max has put some money and technology into coping with this.b) The instant Pot is much better built. It is solid construction, similar to my own pots and pans. The difference can be seen and can be felt, right out of the box. It also is much cooler on the outside skin when operating, even for long times.c) The instant Pot Max has a lot of accessories. Racks, cool micro-mitts, ladles and such. It was nice, but I already had everything -- except that those darned little finger-mitts are indeed rather cool.d) The Instant Pot Max has pretty-much automated all the de-pressurizing functions. You just tell it what you want done. No worries about getting scalded.e) Like my Deni, it has layers of protection against misuse. More layers, for example. It can even detect when your food is burning under a sealed lid.So it was worth the price.

Replaced my standard 6 QT model
I have had a the Wifi version of one of these for 9 months, used it twice. When I decided it was a good time to start using it more, I found that the Wifi didn't work anymore due to their changing things around. I figured I would rather have a better display anyway.I don't do most of the things these are capable of, I simply do occasional slow cooking when I can do that with a smaller pot (I have a normal larger slow cooker for normal use) or for pressure cooking. Since I didn't need all the other bells and whistles, I found what I DID want was a good screen, with usable details. My Wifi model left me guessing if it was even working or not. I love how this one shows me the warm up, the pressure, the release, all the states as they happen.I don't have any issues with the interface, it's easy to set what I want, program or change programs, and see at a glance just what is happening right now.It IS odd not having the normal steam release but I'm getting used to that. It's worked well, handled what I've done with it easily. These really do offer so many better options for families for ways to cook, and shorter cook times. Mine will start getting much more use as I become more familiar with the things I can cook with it.
