Q: Why is it apparently ok to sell this without it being refrigerated if it's alway sold in the stores that way?

By not refrigerating the fermentation process will continue. If you leave it out, make sure the top of the sauerkraut is covered by liquid. If needed, use a weight on top to weight it down. Such as a jar with water in it. This will reduce the chances of mold developing on top. Cover with a cloth to keep bugs and dust out of it. And keep out of the sun. If there is liquid on top without a weight and you keep it capped, loosen the cap everyday to release any gasses that might be present. If you don't, the jar or container could explode. Taste it everyday. When it gets to the way you like it, stick it in the refrigerator. This will slow down or stop the fermentation. So, no you don't have to refrigerate.

Q: I read the label+but can't find anywhere that it says this sauerkraut is raw. Has it been heated? If so, the probiotics in the sauerkraut are gone.

I don't think it could be. This stuff is made via lacto fermentation I assume, and heating it would destroy the live cultures. The fermentation process produces it's own acid(lactic acid if I recall), that keep harmful bacteria from taking up residence.

Q: is that $17.95 for one jar or two?

I purchased this product in November 2016 from Amazon, at which time I paid $29.00 for 2 jars. They were 25oz each. I later found it at a local grocery store and it sold for about $12.00 per jar (also 25oz.). I am not sure of the offer you are currently looking at on Amazon but if it was like the seller I purchased mine from, they did make it clear that the price I was paying was for 2 jars. While expensive, I will say this is the best natural sauerkraut I have found. Absolutely No added anything, just cabbage and water.
