GlobalSAI 6 Inch Vegetable Knife - Lightweight Japanese Stainless Steel, Razor Sharp Edge, Hand Hammered Blade, Thumb Rest, Made in Japan, SAI-M06

The jury is still out for me on this knife (Global SAI-M06). It's a very attractive design and an impressive piece of steel. I'm not a pro cook but I do know tools.I'm disappointed in the grind from the factory. It's not entirely even and on one side of the blade I can clearly see how the bevel was set on a powered wheel and the operator was not smooth all across the edge creating the bevel. It was decently sharp as shipped but a touch up by hand on a ceramic finishing stone and a stropping improved it. There were some very small knicks in the edge which could be felt dragging it along the fingernail.Not sure if I'll be exchanging it, will see how it holds an edge and if it does well will hand sharpen it like it should have been from the beginning.Pros - Perfect balance, looks like good steel, very nice designCons - Factory grind, Cost. For a $130+ knife the final sharpening and inspection should not have passed.(edit) I ended up returning this one and buying a lower-end Global, which I'm delighted with - better grind as shipped, sharper as shipped, a delight to use. This SAI I received may have been a countefeit based on this.

Ce couteau coupe comme un scalpel! Il est très bien balancé et il se manœuvre très bien. J'avais des Henckels avant et maintenant, je suis en train de m'équiper avec les couteaux Global tellement je les aime! Le seul reproche que je lui ferais, c'est que la lame est un peu courte. J'aurais dû le choisir plus long...mais ça, c'est une préférence personnelle, car le couteau est tout de même fantastique!

Firstly a fantastic service from the supplier, can't fault their service.As for the knife, I'm not really sure where to start without sounding like an anorak or a salesman for Global. This is a thing of shear beauty! From the packaging to the first time you handle it to the first time it glides through a previously tough vegetable. The knife is so wonderfully balanced so razor sharp and precise, chores become a must do and pleasure and when you've finished and you've washed it and hung it on the magnetic rack, you too can and I promise will...stand back and just admire!!Told you it sounded anorackish!!Buy one and I promise you you won't be in the slightest bit disappointed.

My son thought this knife was superb. It does all the jobs in the kitchen that he wanted it to do.
