This is the sharpest and lightest high quality knife i've ever come across. Highly recommend 10/10 high score.

Amazing knife/watch your fingers
This knife is a winner! I use it everyday and have decided to forgo my other knives. (Except my paring knives) However, I am now stitched up after cutting the tip of my finger off. This will be the 4th time I have cut myself with this knife. (first set of stitches) It is incredible sharp and makes chopping easy. . . even fingers! I would use this in self defense if needed. Overall, great knife and I highly recommend it to any one who is in the kitchen often. Just be carful. . . and if you do cut yourself often, maybe go with another knife.

Great Value. Great performer.
Knife is exceptional for the money. Extremely sharp and performs flawlessly. I have spent much more on other Japanese knives and this one can hold its own with any of them.

Nice Knife
Have had this knife for the better part of a year and it has been my main prep knife for work. The edge holds very well and is very easy to sharpen back to a hair splitting edge. Its has been dropped many times, light chipping (my fault) and been abused in general and holds very well. I highly reccomend this knife.

Misono is the best knife
I have read so many reviews about the perfect knife. I feel like I agree with so many others in saying if you are going to have one knife in your kitchen this is the one. It is light and easy. There are so many options but this is the five star version of everything you hope for in a blade. I have been cooking for a long time and never found the right knife until I bought the Misono. You won't be disappointed. I love this knife.

Good workhorse knife. Comfortable handle.
This gyutou is nice and light and holds an edge well. I use it for general use and prep work and enjoy the weight and handle quite a bit. Too thin and light to do some things that I would use a heavier French or German chef knife for such as trimming the ends of fabricated chicken bones so I keep a heavier knife handy in my kit for those instances. Great value for the price.

Best Misono knife for beginners.
Entry level Misono, Aus8 steel, decent sharpness, not so good edge retention, kinda easy to sharpen. Good choice for beginners.

UX10's Not So Little Brother
I recently purchased this knife as a "leave at work" alternative to my UX10. I have used Misono knives in professional kitchens for over 10 years and will never buy any other blade. The Molybdenum blade will take and hold an edge better and longer then any other knife out there.If you are an at home "foodie" or a professional work horse I highly recommend this knife. I bought this as a cheaper alternative to my pride and joy UX10 because I needed a quality knife that I could leave at work and not worry as much as to what would happen to it.
