Would this be suitable for a chocolate fondue ?

It could be used for this although there are other products specifically designed for fondue, chocolate fountains, etc with a higher cocoa butter content that allows it to melt more easily and smoothly, such as ASIN: B004E1SLES

Could I use this to make chocolate bars with added bits such as nuts and dried fruit and would I need to do any thing besides melt it?

Absoutely. The callets will melt beautifully (don't heat them much, just as much as you need to. (Microwave for 30secs, then about 10 secs at a time, and stir each time until they melt).) Then just make bars and add in the nuts and dried fruit. This product is fabulous and will give you a really professional chocolate!

Is this suitable for use in a velvetiser? Thanks

The chips are too big for the velvetiser but I put them through a chopper for a bit before I put them into the milk. These taste amazing in my hot chocolate.
