Should this ash pan be seasoned like you would the rest of the inner parts of the grill?

No need to season as this pan is only used to place the coals. I found this pan to be a exact fit as the original and allowed me to restore a thirteen year old coal grill that I have enjoyed using.

can you use this to convert a gas grill to charcoal?

I don't see why it couldn't be used to cover the gas burner if you have a deep enough gas grill. Or if you were to take the gas burner completely out. But this will not stop the ash from overflowing the sides and getting underneath. Hope this helps.
