My favorite is dill
I first encountered Quark when my wife's Scottish cousin, who speaks German fluently, turned me on to it. He also told me that it's pronounced Ka-vark in German. I bought it at a farmer's market from a local cheese producer who was a transplant from Europe. That afternoon we used it as a spread on crackers and it was delicious. The two tubs of quark we bought didn't last long.Fast forward several years later and I stumble across this book that informs me that Quark is actually a healthy alternative to common cheeses. I don't know about you but I need cheese in my life, so I'm in.As I read the book I could feel my stomach growl with anticipation. Quiche. Spaghetti Carbinara. Chicken Tikka Marsala. The recipes all sound delicious and the author's background on the cheese only solidifies my conviction. I need Quark! However, as the author warns, Quark is more difficult to find in the US than England and I since moved away from my local cheese maker. Finally, after trying three stores I found plain "elli Creamy German Style Quark" at my Whole Foods grocery store (they specialize in healthier foods). I was finally ready to try the recipes.I began with the simplest, the one that reminded me most of my original experience, and made a spread for crackers. Plain Quark is creamy and doesn't have a strong flavor but it takes on other flavors well. My favorite is dill, but chives are really nice too (like sour cream on your potato without the fat).Next I had to try something sweet, so I went for the breakfast cereal topper. Just like yogurt, Quark works great on cereal taking on the flavor of the honey and the fruit. I love sweet Quark too.I have yet to cook with Quark (I'm not much of a cook but the Quiche looks like a must), but I can't wait to try. I should be able to pull this off since the recipes in the book are clear and simple. This is a great book if you're looking for lowcal recipes that taste great. Thank you Anthea for reacquainting me with my long lost friend. Great little book.

Really amateur book that is so basic that I sent it back - no pictures, ideas that I am more than able to think up myself and therefore very overpriced
