What does the word PURE means?

All wrong answers. As with virtually everything on modern food labels in the US, the wording has a specific, FDA- or Congress-mandated meaning. For it to be pure "vanilla extract," it must have 13.35 ounces of vanilla beans (which must contain = 35% (70 proof) alcohol. See the US Code of Federal Regulations Title 21 §169.3 and §169.175. The labeling rules for vanilla have been the same since the 1st Bush administration, and the definitions since the Clinton administration. Lower levels of real vanilla must be called "vanilla flavoring" on the label. Also, vanilla is the main thrust of the entire §169 "flavorings" section. Thank your Congressman for all these rules!

what kind of vanilla beans are used? Bourbon, madagascar, tahitian?? I love it but am curious.....

According to the bottle it uses Vanilla planifolia, which is the species known as Madagascar or Bourbon vanilla and is the species most commonly used in cooking. Strictly speaking, Madagascar/Bourbon vanilla would be Vanilla planifolia that was actually grown in that region of the world. Mexican vanilla, for example, is Vanilla planifolia grown in Mexico. Tahitian vanilla, in contrast, is from a different orchid.

Someone please tell me why sugar is nôt listed on the label ?

I looked up the FDA list Vanilla Extract 70% or more alcohol water and some kind of sugar, Nothing else for pure Vanilla or extract of Vanilla. Anything else is not Vanilla Extract. (1) Glycerin. extraction method. (2) Propylene glycol. (3) Sugar (including invert sugar). (4) Dextrose. (5) Corn sirup (including dried corn sirup). (b)(1) The specified name of the food is "Vanilla extract" or "Extract of vanilla".

Why so much alcohol added? Do other brands use this much alcohol?

It's only 35% alcohol. If you Google how vanilla is made, it tells you that according to the FDA, vanilla extract must be AT LEAST 35% alcohol and have a minimum of 100 grams of vanilla beans per liter. On that note, it's very delicious vanilla and a good deal for the price. I've used it in everything from cookies to pancakes and it always adds great flavor.
