Produced between the second half of June and the first half of July, this honey is collect from Siracusa, Italy. Called Timo in Italian, thyme blossoms produce the best honey on earth, according to the ancient Greeks. Colored in varying shades of amber and beige, or hazelnut if crystallized, it offers an intense aroma of magnolia, aromatic herbs and graphite.
