8" Round

This is a really high quality brotform/banneton. Very smooth, very few gaps, almost no splinters. (A few are to be expected; in this case they were tiny and took me all of one minute to pluck off.) I bake fairly high hydration breads -- 85-90% typically -- and lined with rice flour I encountered zero sticking on either my first or second bake using this form. Those are by far the riskiest two bakes; the form is now more or less "seasoned" so it should be clear sailing from here on out. Much better performance than some other forms I've worked with. A couple of notes on the one I'm reviewing here -- 11" -- vs the 8" one I usually use: I've been baking a lot of 1500g loaves and my 8" form was just a bit too small. This 11" model is really gigantic; I think it could comfortably accommodate at least 2000g. Also, the 8" form I have is almost completely curved all the way to the bottom. The 11" one I'm reviewing here has around 4.5" of flat area at the bottom, so the result is a wider, flatter loaf. Nothing necessarily wrong with that, but worth mentioning. This form is exactly as advertised and a good buy. Definitely recommended. Happy baking!

This basket works great for my sourdough. I use it to proof dough overnight, I lightly powder the basket with flour and my dough is able to come out fairly easy. Tried using it with a tea blanket my last time using it and it was even easier to get the dough out and still gave the circular lines that I like.

I purchased several of these bread forms for my daughter's birthday at her request. She really likes this kind of form and now owns several. She's an experienced baker and bakes several times a week. The only issue she's having with the forms is the difficulty of getting her raised dough to land exactly where she wants it to go when she turns it out of the form, but that's because she turns the round loaves into a ceramic casserole to bake. She is otherwise quite happy with the forms. They're really sturdy and should last her the rest of her life. Worth the investment for a dedicated baker!

I had not used a proofing basket previously- normally I use a small bowl or other similar things to proof my dough. I did try it without a cloth and for me I won’t do that again because my dough stuck even though I floured it well. I used a tea towel well floured and that worked perfectly. I love having it.

Love this for my sourdough baking. Keeping the dough from getting too much condensation, while it proofs overnight in refrigerator. Like it more than silicone banneton.

Purchased this due to Ken Forkish recommendation in his book Flour Water Salt Yeast. Great book but Ken said it was the best and well worth the extra cost. Mine has small gaps made out of 5 pieces and has glue which you can see through the cracks and rusty staples. This is so overpriced there is no reason for such shoddy construction. I contacted the company and claimed that mine had to be a knock off that amazon was selling because theirs is such high quality. The rep from Frieling claimed theirs came in a cloth bag which the one from amazon did not. Eventually after communication through various mediums they agreed to send me a replacement. I got the replacements today and although sans the small gaps that the original one had they were exactly the same, rough wood, rusty staples made from multiple pieces. The shape was exactly the same and was not in a cloth bag. The cardboard tag in the bottom was also identical. Even the ones directly from Frieling would be worth maybe $8 at best. They look really cheaply made. I ordered another brotform from a different manufacture from amazon for $16 (Bake-Pro® Brotform 8.5'' Round BP-500) and the construction and look was very solid and beautiful with smooth wood. I know there is several good reviews for this but perhaps its just due to being recommended in a book people think its great ... $40 for rusty staples and glue! No thank you.

These work well and seem elegant in design and execution. They are a joy to use in that they work well and call no attention to themselves by introducing problems to the process on baking day. Recommended.
