Is the outside material canvas (durable) or a softer material?

Softer, basically a cloth-like material, not canvas.

Are the two bags zipped together with the zippers on the side or in the middle?

One becomes the top and the other becomes the bottom. That puts the zippers on the sides. On a single bag, the zipper runs along the side and bottom so you can unzip it, wash it, and dry it flat.

Can I put this in the dryer? On high heat? It didn't come with a manual.

High heat will melt the plastic zipper anti-grab mechanism and make the zipper useless, as it did with one of ours. Use medium or low heat.
