Love so far
I just started using this press and love it so far. I easily pressed a block of tofu yesterday. Simply set the tofu in, put the top on and let it sit. I did notice it pressing unevenly at first and after having watched the demo video on their site I knew to just give a few nudges, even it out and reset the lid.I swung by the kitchen every so often and dumped out the surprising amount of water that had collected. After a few times no more water was present and I began marinating over night with the attached lid. Pressing took maybe 30-45 minutes for me.It really couldn't have been easier.I haven't tried the #2 spring yet, but I do make fresh cheeses often and will likely use it soon. After pressing tofu I really can't imagine it not performing well on cheeses.Pros: Pressed out a lot of water. Resulting tofu was dense and accepted marinades well.Cons: Price was pretty steep for a few pieces of plastic and a spring. It works well so I won't complain to much about it. I also wish it had drain holes of some sort so I could just place it in the sink or on a bowl. The amount of fluid released from the tofu made me think it might eventually overflow.

excellent gadget
I love this tofu press. It is the perfect shape to hold almost every brand of commercial tofu, and it will also press pickles and cheeses using one of two tension springs. I had another of these a year ago but it broke, and I missed it so much I needed to get another. If I have one complaint about it, and this is why my first one broke, it is that the arms that secure the top spring plate are thin plastic, and if you happen to bump or drop it in those spots the whole thing is useless. I wish a redesign would include reinforcing these pieces with some metal inside or thicker plastic.

Vegan made easier
This works great! After the tofu is pressed you can add your marinade right into the container cover it and ready to cook.

I don’t have to use a lot of paper towels to drain and dry my block of tofu anymore. It was easy to use and cleaning it is a breeze. I made an excellent choice. It’s made in the USA!

Works perfectly
I bought this press after I had to give up eggs and start making my own tofu scrambles for breakfast (rather than spending $4+ on pre-made scrambles from the store). The weekend before I had this, I'd gone through 20 paper towels as I pressed my tofu old-school under a bowl filled with heavy stuff. The TofuXpress involved NO paper towels, no mess - easy peasy! I love it and I've only used it twice!I bought the soft tofu in error, so the light attachment worked great. I used the light spring for an hour, then switched to the normal spring - it came out slightly softer than hard tofu with all that squeezing. Perfect!I have a friend that's had a TofuXpress for well over a year and uses it several times a week, so I'm not expecting anything to fall apart any time soon. To me, it was worth the cash (yes, a bit pricey but soooo easy and efficient that it's worth it). I bought hard tofu today and will be squeezing my way to an nice Asian stir fry before the weekend is over.

Not quite there yet
I had very high hopes for this. Bought the one with two springs figuring that would offer me a wide range of things to do with it.After recently moving to a vegetarian/vegan diet and finding myself eating a lot of tofu I looked around for something to squeeze more water from it. I bought this tofu press based on the reviews - it is versatile and would do the trick!It ended up being a disappointment. The heavy duty spring is to press the water out of tofu; the lighter spring is for other items. The springs are easy to install and use - but the heavy duty spring ultimately proved to much for the tofu press. After using it once, I noticed a 1/3" crack had developed in the pressure plate where the spring meets the plastic. After using it five times, the crack was now 2" long and continuing to grow. I had followed the manual diligently and watched the video to be sure I was using it correctly: I had been.I have returned the item but am sorry to do so. The concept is good and I really wanted it to work well. Shame.

LOVE LOVE LOVE it
K, didn't think I would use this this much. I have used it a half a dozen times since christmas. GREAT little product. You have 2 springs, light and heavy press and a nice lid to marinate. If you use some paper towels or some cheesecloth you can even press yogurt with it. My fav so far is firm tofu, press it for a day, drain it out, cut it to whatever size you want, then put back in the press, add marinade and the lid for marinade and the tofu sucks up the marinade, or do a spice rub and bake for super firm and meaty tofu. I made tofu feta cheese that came out great due to the moisture being pressed out so the tofu could suck up the feta brine. Really a great product, no under tray needed either, just tilt and the liquid comes out. LOVE it

Simple Inventions Are Often the Best
Getting the excess water from firm tofu required tons of paper towels and a large can of baked beans to accomplish the task. Now, it's goodbye to all that waste and continuously trying to balance the can of beans. Since I love to cook and now that I'm finally retired, I've been experimenting making my own tofu and soft cheeses like paneer, feta, and queso fresco. Tofu and cheese has to be weighted down to get rid of the excess whey. The wooden boxes for making tofu made the experience messy and annoying. The same with making cheese. So, I decided to see if the Tofu Xpress would make the process easier. The answer is yes. You do have to experiment a bit; but, once you get it right, the Tofu Xpress works perfectly. Equipment like cheese presses are expensive. What's really great is you can make your own soy milk using soaked soy beans. The result: A pound of homemade tofu for under a dollar.
