This knife is an excellent value, extremely well made and easy to keep razor sharp. White steels don't quite have the edge retention as the blues, but it is still better than many of the stainless steels out there if you want shaving-sharp edges. I enjoy the process of sharpening, so once a month I touch up (even if not really necessary) all my knives anyway. Great product, Yoshihiro is now my go-to for kitchen knives.

Bought this knife for my Culinary classes. Absolutely love the knife. Usually I have to sharpen new knives when I get them. This came sharp and ready to use. The wooden knife case is also amazing. Great quality.
