I have been delighted with this excellent new publication in both its layout and detail on all the aspects of Chablis (not to mention Auxerrois). George is painstaking in her attention to detail. The very succinct narrative about Chablis' history is a perfect introduction. The descriptions about fermentation and elevage are easy for the lay person to understand. Soils, classification and vineyard analysis are all given careful treatment and analysis. I also found the domain profiles very informative and helpful with not too many tasting notes. Technical material on yields and vintage dates is set out for those who want to study to that level. There is a good selection of coloured photos that show the lie of the land and soil types.The book is completely up to date with even some notes on the 2018 vintage. An excellent book and a great one for dipping into as well. You learn something on just about every page. Thoroughly recommended.
