Mangosteen (Garcinia Mangostan) has been used for centuries in folk medicine as well as the traditional medicine systems throughout Southeast Asia. Each mangosteen fruit is selectively picked and only the fruits that are dark red to purple in color are chosen...indicating a perfect state of ripeness for the highest nutritional value. The pericarp is then removed from the white fruit inside. The fruit is removed and used for other purposes. But the outer skin (or pericarp) is laid out and exposed to the sun...a natural drying process that has been used in Southeast Asia for centuries and has not been improved upon even with today's modern equipment and science. Sun-dried pericarp can yield the highest tannin concentration of 5.5% and is still preferred there for medicinal usage over any other drying methods. After the drying process is complete, the sun dried pericarp pieces are then ground to a fine powder.
