I work in a kitchen and on my feet for 14hours a day. Would these be better then the work style?

Personally, I found these to be more comfortable than the "work style." Seems these have a better arch support.

Are these thin enough to fit in a pair of boots?

I think it would depend on how tight the boots are, if you're also wearing thick socks, etc., but they should fit yes.

Are these low profile enough to fit into Converse?

Dunno about Converse, but they are low profile enough to fit into my Asics shoes without even removing the old original insole. I love them.
