Super fluffy cupcakes, great texture
Purchased this mix on a whim to make some more carb and gluten free cupcakes for a potluck. I've been eating sugar free for about ten years and I don't like things that are sweetened with alternative sweeteners that taste overwhelmingly sweet. This mix was perfect. The cupcakes rose really nicely and were so light and fluffy. Not at all like mixes made with nut flour. The flavor was very mild, but I was okay with that. I made some frosting from butter, cream cheese, vanilla, and allulose and they were just amazing. I have co-worker who doesn't do dairy, so I made a sugar free berry compote and cut out the centers of three of the cupcakes and filled them with berries. Both frosted and berry filled got rave reviews from my gluten free/sugar free eating colleagues.Note that this mix is very high in fiber, so if your digestive system is not accustomed to that, you're going to get some gas if you go overboard on eating these.

Incredible!
I can’t believe it’s taken me this long to write this review, but here it is!This cake mix is fantastic! Every once in a while I like to make a low carb dessert to satisfy my cravings. And with this mix, I was able to make the best tres leches cake I’ve made since starting keto.I could only wait about 10 minutes after soaking it with the tres leches mixture and adding the whipped cream topping, before taking a bite 😂 I managed to stretch the cake out to last three days before I finished it. And by then, the cake had absorbed the tres leches beautifully. It wasn’t dry, nor did it have any gross chemical after taste and cooling effect like 99.99% of all other low carb/sugar free baking mixes have. I also didn’t have any of the digestive issues I tend to have from similar products.Although I can’t attest to the “dryness” that some reviewers have mentioned, I can say that this is the best low carb dessert I have ever made, and it’s not one that I’ve been able to replicate with other brands. Overall, I HIGHLY recommend this cake mix!

Great option for keto
The cake is not as light and airy as a typical cake mix, but the flavor was good. We'll make this again. I do wish they were a little less expensive.

Great low-carb substitute for real cake.
These really are quite good. As other's have noted, there is very little flavor or sweetness. However, for me there is enough and it isn't totally bland. I did add a tablespoon of unsweetened raspberry baking flavoring to help a little, but even with that the flavor profile is very muted. I'm not one that likes overly sweet cake/cupcakes anyway, though. They are moist and fluffy and mine didn't seem to rise any more than a regular cake/cupcake would as some people have experienced. That may be due to the addition of the extra flavoring, I don't know. I waited a couple days to leave a review to see if they lost any moistness like another reviewer experienced. After leaving them in a sealed food container overnight on the counter mine were fine the next day. They actually seemed a little better, to be honest. That may be due to the humidity levels where I live versus the other person, don't know. I think they are great and this review is based on eating them plain with nothing else on them. I can only assume they would be even better with something on them or used in one of the recipes on the Scotty's website.

They look very nice, and the texture is amazing, but the flavor is none nonexistent even with the vanilla extract. Probably would have been better baked with some blueberries or some cinnamon or pumpkin spice extract

I changed package instructions just to make theseAdd 3/4 c Allulose to dry mixUse 1/2 water and 1/2 half and halfAdd 3/4 c walnut or pecan piecesUse banana extract instead of vanilla ( I got on Amazon)Bake as directed in 12 cupcake pan with paper cupcake liners YUMMY!

More like bread than cake.
I am a huge fan of cupcakes, so when I tell you that I took 2 bites of these and tossed it in the bin, that’s saying something. I’ve got a few un-frosted “cupcakes” that I’m going to try with some strawberries and whipped cream in hopes of salvaging some of this batch as shortcake bases. Overall, very easy to make and make quite a bit for the pouch size. The cupcakes puff up at baking and look quite pretty - but flavor-wise these are problematic. They aren’t sweet (honestly they taste kind of stale - my kiddo described them as “dusty tasting”) and the texture is very, very dry. Very bread-like. If you’re into fairy bread, this would be quite good for that. But if you’re expecting cake? This is probably not going to be it for you.

Great flavor! Keto Hubby Approved!
Made these for my keto hubby as his soft spot is for plain vanilla cake. These were great and had a nice texture. No icing needed with a nice bit of sweetness, we ate these when they popped fresh out of the oven and were still good delicious the next day. Will definitely order again.
