Q: Can the hub be stored in the pit when not in use?

No, it can't The black cover will cover everything but not the top black iron griddle.

Q: Does the fat just drip down into the bottom of the pit and through the ashtrays holes? Surely all the gunk must build up and render it uncleanable?

No…. In reality it sits on the u- shaped griddle and once you have removed your steaks , if you keep the griddle over the heat it burns off. If it does drip it’s burnt off in the heat. The griddle is a marvellous bit of kit and we use all the time. Slight wire brush to get the crud off now and then. Hope that helps

Order the grill for the model you got as they are a different circumference
