Q: Is bajri and bajra the same?

Yes. They are the same. I believe this product is pearl millet.

Q: Is this the same as pearl millet flour?

I've never heard of pearl millet flour, but anything 'pearled' usually means the husk has been removed, decreasing the food value and taste. Stoneground flour doesn't get heated the way machine ground flour does, so also better taste wise. I find this to be a really useful and tasty flour, brilliant for pancakes and anywhere you want a light, tasty flour.

Q: Is Jalpur Bajri Flour nut free/ suitable for those with nut allergies?

Millets are a group of highly variable small-seeded grasses grown for food, you probably know this anyway. (See Wikipedia's entry on it). The back of the packet of Jalpur Millet flour states, "Produced in a mill that handles, wheat, gluten, nuts, peanuts, mustard, sesame seeds and soya". So, if you have a very severe nut allergy, you might want to stay away from it. The problem would be from cross contamination of small traces of nuts getting mixed into the flour by accident. This is why they give they warning. They are saying, "Nut allergy suffers be warned." However, I'm coeliac, so can't have wheat, which they handle in their mill, but I make my bread using this product and have had no trouble. EVERYTHING seems to have the same warning on, I'm amazed it's not on bottles of water! Everyone is just covering their backs. I've eaten a lot of things with a warning about wheat or gluten of it and been OK. I've 'phoned companies and asked why the warning is there when the food doesn't list wheat or gluten, they say' "it's just in case of cross contamination." You may find your health food store can get pure (safe for you) millet, it would be more expensive than this brand, which is very cheap. If you really are unsure, or at high risk, I'd ask your doctor's opinion about the risk involved in eating it. That's the best I can offer, sorry.

Q: Does this have a high calcium content? And if so does that decrease once baked?

Hi, Millet flour has between 8 -14 mg of calcium per 100g. Compared with milk which has 275 - 300mg . One word of caution eating too much millet can cause the thyroid not to metabolise iodine & therefore produce thyroxine

I cannot vouch for whether this is pure millet flour or not, as it's browner in appearance and smoother/gummier in than other millet flours I have used. Millet is usually pale yellow and grainy in texture. I use it to make suet for songbirds, who prefer seeds to grains.

Great for making gluten free bread

Great for making gluten free bread, mixed with tapioca flour. Be warned that only about half the flour and water normally used is needed as it rises a lot and makes a light loaf compared with rice and potato flour recipes!
