His new kind of silicone casting mat is the ShowStopper, a single silicone mat with multiple, thematically shaped cavitiesthat when cast in chocolate or sugar provide pastry chefswith a variety of cast shapes to quickly produce amenities, centerpieces or showpieces.With beautifully beveled and curved elements, focal pieces and flourishes,quick construction is possible.The Wave ShowStopper is inspired by the powerful motion of the rollingseas. These deceptively simple curves and curls bring an elegant touch to anypresentation.ShowStoppers are 16 x 24. Cavities are 3/8 deep and beveled small disc cavities are deep. All the ShowStoppers (Wavy, Flame and Heron) have stress release cuts to make un-molding easier. Each ShowStopper comes with its own inclusions. Made of food-contact-safe silicone. Wash before use. Do not heat above 450 F/ 232 C.The ShowStopper is used as shown below. First put your mat on parchment paper atop a flat workboard (notin a sheet pan). If filling with chocolate, refrigerate to set if filling with sugar(isomalt), the mat should be allowed to cool before unmolding. Once the sugar or chocolate has set, the silicone isteased away from the casting (i.e. the food product),then the casting is carefully demolded by letting the mat drop overthe edge of the work space and carefully coaxing out the casting. Working fromthe outside edges inward will result in fewer broken pieces. (The shapes that do break areeasily mended.) The unmolded cast pieces can be quickly assembled into amenities,centerpieces or showpieces.
