Wicked sharp
Much sharper than I expected, this rivals even my Shun knives for sharpness at a fraction of the price! The knife is very light, but balanced. The handle is large and comfortable to hold. A very easy to handle knife overall. My only concern is how well the knife will hold it's edge, but so far I'm very satisfied. An excellent knife at an excellent price.

The best knife
Won’t buy any other brand. This is my favorite knife. Great for chopping meat or veggies. Sharpens up beautifully and keeps its edge.

Great kitchen knife. Get this one first!
My family has always used full tang knives which have metal throughout the entire handle. You can get a full set of cheap full tang knives for the cost of just this knife so I thought this would really have to be good. When I first used this knife I thought there was something wrong with it, it felt so much lighter than anything I’ve used. Now I prefer it. Once you are used to the shape, balance and weight, this knife is an excellent tool to have in the kitchen. It’s still sharp a year after I bought it but it could probably use a sharpening. Looking back I may have considered the plastic handle for this. I love the wood but I’m unsure if it’s worth $20 for the same knife. I just ordered the Victorinox steak knives which are only plastic handles (unless you spend a lot) and if I had gotten the plastic version of this, it would match. Oh well.

Victorinox Rosewood handle 8-inch Cook knife.
A sharp knife that is easy to sharpen time and time again. I use this knife at work to prep vegetables, meats. The handle is very nice and very easy to maintain a light coat of mineral oil to keep the handle from drying out.

Love this knife
Wanted to get a decent quality chefs knife but didn't want to spend hundreds of dollars. This is perfect for me. Feels good, excellent balance, nice handle

Great sharp knife.
Light, sharp as heck, and never needs a stone. This knife kicks serious booty. It is so good I hate using it for fear of somehow wearing it down.

It looks nice. Sharp out the box, but after using it once on apples, it is not as sharp. I guess u still have to maintain it every time. I have checked everywhere, and they say this is the best bang for the buck. I guess I have to invest in a sharpener as well. Any recommendations for bifl?

La qualità del materiale è indiscutibile. È duro al punto giusto per tagliare e riaffilare con facilità. Il filo tiene bene in cucina. La forma della lama è perfetta per l’uso culinario: entra nei cibi senza spezzarli. Il filo tocca il tagliere in modo naturale e uniforme, senza affaticare il polso. La punta è precisa e ha lo spessore ideale per i tagli piccoli: non è né tozza né troppo sottile. Non spacca l’aglio e non si flette facilmente. Insomma, è la lama di un vero coltello professionale da chef. Complimenti. Tuttavia, il manico in legno presenta qualche criticità. È ben fissato con tre perni metallici, e la lama attraversa quasi l’intero manico, come ci si aspetta da un coltello da chef di qualità. Ma nel coltello che ho ricevuto, c’è uno spazio tra il metallo e il legno del manico: circa 1,5 mm da un lato e 0,5 mm dall’altro. Uno spazio sufficiente perché vi si infilino residui di cibo e acqua. Ho dovuto riempirlo con una colla per legno sicura per il contatto con alimenti. Il manico, esteticamente molto bello e piacevole da impugnare, ha una forma eccellente per una presa salda ma comoda. Tuttavia, messo in lavastoviglie (cosa che ho fatto qualche volta), il legno non si è spaccato, ma ha cambiato colore diventando più chiaro. Da ora in poi lo laverò sempre a mano. Peccato. Attualmente non trovo nessun altro coltello da cucina con una lama così perfetta e un materiale di questa qualità a un prezzo simile. Spero che Victorinox riveda e migliori solo il fissaggio del manico.
