Q: Can I use for glass and plastic on WV?

I tried using it on a plastic expansion bottle and it didn’t work but that might have been because of temperature and moisture both being present . So not really an answer but might help you in your decision .

Q: Will this stick the rear glass to canvas roof on a convertable?

I used it for that. But you need the roof open and slack for 48 hours otherwise it won't dry properly and separate under pressure when closed and tight.
