I am using this to make quark and stracchino it works really well. It also keeps well in the fridge: a few drops still work to turn milk into cheese.

This product let me down.
I just ruined $14 worth of milk. I bought nice organic unhomogenized milk to make mozzarella. I acidified the milk correctly and minded my times and temperatures. When I unscrewed the cap on this product, dried flakes of rennet came out like dandruff, indicating it might be as old as me. I was beyond the point of no return so I used it. Didn't get a clean break. This is not working. No caprese tonight.
