Performance beyond excellence.
There are not enough good words for these knives. They are beautiful to behold with the Damascus blades and the layered wood micarta handles. The core is VG-10 (take the time to research this steel, it is held in high regard). The blade can be sharpened to an amazingly narrow 15 degrees, and the edge holds up. It cuts like a surgical tool, and not like a common kitchen knife. I own a few of the highly reputed German kitchen knives; the Zhen is a better blade. It's handle fits the hand nicely with it's gentle curve, and has a satisfying heft to the handle which makes the blade feel feather light. The matte finish on the handle prevents it from becoming slippery should it become wet. The front bolster is narrow enough to get a proper "pinch grip" on the blade for certain cutting operations. These knives area solid ten on a ten scale. It is not possible for me to imagine a way to make it better. Take the time to do the final hone on the blades when they arrive, you will be rewarded with a precision instrument in the kitchen.
