How To Operation 1.To turn on the thermometer,pull the probe away from the thermometer body.The LCD screen will turn on,display all options,then display the current probe temperature.To turn off, press the "ON/OFF" button. 2.The thermometer is set to display temperatures in degrees Fahrenheit.To switch to Celsius, press the "℃/℉" button. 3.To check the temperature insert the probe into the thickest part of the food. 4.Data Hold.Before withdrawing the probe from the food, press "HOLD" button.It will display the temperature reading until pressed again. 5.The temperature will be displayed on the LCD screen. 6.The thermometer will turn off automatically after 10 minutes if no other buttons are pressed. 7.To change the battery, open the case on the reverse side of the thermometer. Replace with an AAA battery. Field Calibration Procedures 1. The thermometer is only calibration in aslushice solution(60%crushed ice and 40% tap water) or a water bath. Do not attempt to calibrate in any other manner. 2. Immerse the stem of the thermometer to at least half length in the slushice solution. 3. Wait for the reading to become stable(usual ±2℉ of 32℉ or ±1℃ of 0℃). 4. Press and hold the HOLD button for 8 seconds to begin calibration. 5. CAL will be displayed for two seconds and calibration at 32℉/0℃ is completed. Barbecue Temperature Reference. Select meat type and "doneness" and your meat will be cooked to perfection!

Works great and is bang on even down to being exactly the same as my science Mercury thermometer
It is far more accurate than I thought. I have used it twice now first time to set my hot water temperature after my boiler and hot water tank was changed, second time to check the temperature of some sugar I was supervising turning into toffee.
