Fine company and product however if you've never used this it has an "earthy" flavor and if baking doesn't act same as wheat flour.

I searched and tried multiple products for making a traditional Chinese food called "Jian Bing Guo Zi (煎饼果子）. This is the perfect one! High quality. I like the bulk size for better value. I bought the 3lb package this time. I have just made a new order of 5lb package today.

I bought this to try out. I have no complaints about it. It is as described and I’m happy about that.

The product claims that it is gluten free. However; there is a tag on the bag that states it's allergen information that says it Shares equimpment with peanuts, tree nuts, wheat, milk, soy, eggs and sesame. some people might be able to take the change of cross contamination, but my husband has Celiac's and we cannot take that chance. When trying to return it, it says this item is unreturnable..... I have reached out to the company to see if they will allow the refund and return as there was no way for me to know before hand that contamination was possible. I only just sent it so I don't know if they will work with me, but I wanted to make sure that information was out there for anyone wanting to purchase the flour.

The packaging was high quality, you can tell that they go the extra to give the customer a great experience. I used the flour on my last loaf of bread and it exceeded my expectations.
