Q: Is there a data sheet for this product? I am unsure how to wire it - is one wire power and the other signal?

It acts like a rheostat varying the current flow beween the two wires so it doesnt matter which way you connect it. The trick is you have to ha a motherboard sensor or attachment that provides the correct current so it is correctly calibrated. This is standard for the most part. You have to connect it to any 2 pin temp connector.

Q: My mobo wants a 4 pin header, is there an adapter or something more i need?

If your motherboard has a 4-pin temperature header, it will indicate which two pins need to be populated. I could be wrong, however I suspect you're looking at a fan header.
