Q: How do they hold up when food is being cut on with a knife

I use them myself for snacks or deserts. I have cut on these plates but not excessively. I have had no problems at all. The plates are very sturdy and I use them daily. I even have a set I use to feed feral cats and they are used and washed daily. They have no scratches at all.

Q: Are these plates definitely microwave safe? I noticed it doesn't say that on the plates..

Not really. Its plastic so it can melt. If you do microwave, I wouldn’t put it in any longer than 1min.
