my new kitchen best friend.
It is such a good mandoline, easy to clean, cut even soft tomatoes. Eating more vegetables doesn't mean spending much time in the kitchen. One of my friend who has a restaurant was impressed. Really good quality. I have gloves when I don't use the de buyer protection (for cucumber for instance). You need a short adaptation period to get familiar with it (pick the perfect size...) but a worth it tool.

Disappointed with limitations and dangerous "safety" features
Disappointed with this Christmas gift. This v-slicer is terrific with anything small enough to fit in the slider/pusher. The user can select thickness for slicing items or choose 1 of 2 combs that allow for julienne and dicing (I am impressed with the dicing aspect as my last v-slicer could not do this). When using the slider/pusher the unit seems quite safe. I have downed sliced apples for the food dryer and diced onions for recipes in little time and with the illusion of complete safety. BUT, you won't always be using the slider/pusher because it is too small. You will want to use a mandolin when slicing an eggplant or cucumber into long strips and you will end up discarding the slider and just use your hand or pusher. The hand method often turns out bad. The pusher only method isn't much better as the pusher depth allows contact with the v-blades and combs. I imagine as some point the pusher will no longer give traction on food and I will have eaten several iterations of finely shaved plastic.This brings me to two "safety" issues with this mandolin. First, the adjustable slicer pad has a setting to rest against the v-blades for safe storage. The markings on the adjustment knob are so small that I need a magnifying glass to read them. The safety difference between settings 0 and 1 is dramatic (0 = more or less safe, 1 = a turkey twine tourniquet). The second feature is the cheap plastic cage used to hold the combs. It fits poorly on the unit for storage and because of its lousy construction it can be difficult to remove the combs. My experience is that a comb was very difficult to remove (yes I know to pinch the tabs) with the force used causing the cage and comb to slip out of my hands. Both hit the floor and cage was damage (unfortunately the combs are no more easy to remove than they were before).Quick summary: if it fits in the pusher/slider you are good to go with relatively safe slicing (with thickness selection), and two sizes of julienne and dicing. If you have something larger than what will fit in the slider than all bets are off and you will probably return to having nightmares of Jr. High wood shop class and with "Kevin" cutting off his finger on the band saw.UPDATE (downgraded to 1 Star): This is possibly the worst kitchen tool I have and is now going back in the box and into storage. Why? The misfitting cheap plastic cage that holds the comb/blades has broken two additional times. The manufacturing said they would send me a new one but never did. The 'adjustable' comb (flat with 1-10mm settings) does not hold its position. A 5 mm potato slice becomes 6 or 7 or 10 very easily. The problem here is two-fold, the spring tension in the pusher is too high and the poor quality of the adjustable pad has allowed it to become sloppy.

The seller was great but I subtracted one star because the De Buyer Viper Mandoline, while good, is only just as good as the PL8. The PL8 is also more convenient to store and set up at half the price. The snap together plastic design makes for a loosy goosy feel to the Viper. Overall I prefer the shortcomings of the $60.00 PL8 to the short comings of the $130.00 Viper. I have a Bron too which is better than both. The Viper does cut very soft vegetables well however because of the exaggerated slope of the blade.

Difficult to use
Things I like about this mandoline:1 - replaceable blades - this is pure genius! It should be standard on all mandoines2 - solid construction -- made of stainless steel, you're not going to worry about this not holding up3 - convenient carry case for the blades4 - a wide selection of blades - 2, 3, 4, 5, 7 & 10mm blades give you the precision you want5 - you can dice into cubes or diamonds - so fancyWhat I don't like about this mandoline:1 - I found it really hard to use the guard. You have to hold the guard AND press down on the plunger to keep your food pressed down so it meets the blade. I was tired after only 1 potato.2 - It didn't move smoothly when I used the guard. Maybe I need a lower counter or something. But to be fair, I've had other mandolines and didn't run into this problem at all with those other tools.3 - I finally gave up on the guard and put on my cut-glove. That made things a little easier. But unless you used the guard, you won't be able to dice into cubes or diamonds - which is a bummer4 - it's big, so it does take up a lot of storage space. I haven't found a happy home for it yet in my tiny kitchen

Steer clear of this product! It is flawed and overpriced. I would suggest an OXO mandoline.

Simple Savior be Careful
It’s true you can really hurt yourself on any mandolins. I picked one up after throwing 4 others directly into the trash— at a upscale resale consignment place locally for just 25$— but I could see a few things— the guard is better than average. and after using it on hundreds of cabbage heads and cucumbers and carrots and dichon radish, onions, and celery stalks, I can say it keeps sharp. I don’t pretend I ever changed its blades, or understood it’s exact dishwashing instruction— I just throw it in there. And the guide is better than any other of my 4– though it’s still pain in the butt the rest of them (high priced tier) are flat- the V is the key. It’s like a taffeta witches hat when gardening in the sun. Something my great grandmother would’ve killed for and that Sears Roebuck never fathomed. Perhaps I’ll stay thin and keep use of my fingers. Leave it to the French. It’s amazing. If you have something better name it or pose. You’re probably a fraud.
