Thai and TrueCurry Paste - Green

As close to Thailand in a jar as you are going to get.
After going through the usual suspects of readily available Green Curry Paste, I was preparing myself for yet another disappointing culinary adventure. I had almost given up hope that there was a curry paste available that could even come close to replicating curry from Thailand. I am glad that I didn’t, and gave Thai and True a chance.I made a rather basic green curry last night for dinner using this curry paste. I tried a bit of it right out of the jar to try and get an idea of the flavor profile. It tasted bitter, almost salty, which is odd as it only has 5 mg of sodium per serving. What was truly telling that I was dealing with a different class of curry paste was the aroma and consistency. It wasn’t thick like play dough, it looked more like ground spices and chilies. It also had a much stronger aroma right out of the jar than any other green curry I have tried. While this was encouraging, the proof would be in the end product.I ended up reducing a can of coconut milk by about a 1/3 and made a chicken curry with some yellow peppers, carrots and onions. The container said to use 1 Table spoon per can of coconut milk. Since I am use to encountering bland curry paste I used about 1 ½ Table spoons… I sautéed the paste for a minute or two over a medium high heat, to try and bring out some more of the flavor. You could quickly smell “curry”. I added the paste, some fish sauce, and a touch of sugar to my coconut milk, which turned a very pale shade of green. I was about half way through simmering the curry when my girlfriend came home. The first words out of her mouth were “Wow, it smells like curry in here”. I took that as a good sign.While the end result was still nothing compared to curry I have had in Thailand, this was the closest I have been able to come using a paste out of a jar. And this result may have more to do with a lack of availability of other authentic ingredients like fresh kaffir lime leaves, fresh galangal and baby Thai eggplant.The end result had a perfect balance of sweet and bitter. The flavor profile of the curry really came through and was quite pleasing. My girlfriend offered the following critique… “make more of the broth stuff next time…”I can’t wait to try out the rest of the line of curry paste by Thai and True. If the green curry is any indication of the quality of the rest of the curry pastes, then my search for Thai in America may be over.

Still can't get restaurant quality
Man, I wanted to love this curry paste so bad. I am trying to make really authentic green curry at home but just cannot seem to get it right. I do believe however, this is the best canned or jarred curry paste I have ever used. It is not overwhelmingly spicey so you can add enough to get good flavor and color to the coconut milk. It isn't too strong on lemongrass or lime like some pastes are. It wasn't my miracle worker like I had hoped, but it is decent.

Vegan, natural and flavorful. This curry has an incredible taste and is by far the best green curry on the market. It makes great tofu green curry and pairs well with basil based Thai dishes. I even add a spoonful when making fried rice - incredible. It is a must have in my kitchen.
