Awesome Pasta Flour
This is wonderful pasta flour! We missed the fresh pasta that we had in Europe and I wasn't able to recreate the taste/texture with regular flour. This flour is exactly what I was looking for!! For 2 people, I use 1 large egg (45g), 100g flour, 1/2 tsp salt and 1/2 tsp olive oil. Mix together and knead dough BY HAND for AT LEAST 10 minutes and then process using the dough roller/cutter with the Kitchen Aide mixer. Boil pasta 20 seconds max. Oh how wonderful!

This is the best flour for wood fired pizza! We never fail to get it right with this flour and our guests love the pizza.

Love this for pasta. I have made home made pasta a number of times and it's always perfect. One bags makes 3 recipes.

The dough is soft and the resulting crust is awesome!
I used this flour for the first time last night to make pizza in my wood fired oven. The difference in the dough using this flour is drastic. You could stretch the dough out for a pie with minimal snap back. Also with there being less sugar (natural complex sugar in flour) in the flour caused a reduction in the amount that the crust charred. My hearth temps were in the 800-900 degree range and the was much less charring than when using American milled flours. The dough is soft and the resulting crust is awesome!
