A good coagulant to be used when making tofu
A good coagulant to be used when making tofu. As the flakes are quite large I recommend that you grind them in a pestle and mortar into a powder and then dissolve in a few teaspoons of warm water prior to adding to the hot soy milk, so as to improve even distribution. This particular brand has no bitter or unpleasant taste and allowed the creamy taste of the soy milk to shine. This particular brand came as a plastic bag within a paper bag - just make sure that you keep the plastic bag sealed with a clip to prevent air or moisture getting to it before putting it back inside the paper bag to protect it from sunlight. For quantities, see your tofu recipe and adjust accordingly but I find a good starting point is about a teaspoon of flakes to 1 litre of soy milk and then work from there with trial and error.

Does not work.
Tried using the nigari as recommended,stirring into water,but nothing happened.Mixed with soya milk,both homemade and shop bought,and again nothing happened.Is there something I'm missing [apart from the money I wasted]?
