Wok Shop's No. 1 Size Carbon Steel Chinese Cleaver
This is a superb Chinese cleaver and worth buying. It is strong, sharp, and well balanced. I can't wait to carveinto a piece of roast duck or chicken with this cleaver. It is carbon steel and needs to be wiped dry afteruse and cleaning, but it takes a keener edge than stainless steel. The wood handle will give you a better grip andcontrol. The Wok Shop in San Francisco is superb.March 2015....Just purchased a second one because I was so impressed by the quality and workmanship of my first order. Thesecleavers with proper care and using a steel to sharper will last for years. I carved roast duck with this No. 1 size cleaver and itwas so easy, sharp and balanced that I can't say enough praise. It isn't one of the Chan Chi Kee cleavers which sell for around$80 and hard to find, but this No. 1 size cleaver from the Wok Shop in San Francisco a great buy. Great store to use on Amazon.Good selection. A personal visit will amaze you--cookware and utensils everywhere.

It's a nice cheap knife if you are looking for a stainless steel knife.. The knife is supposed to be carbon steal , it is NOT, it is stainless steel, although the image does not show that it shows that it is carbon steel. I was looking for a carbon steel cleaver, one like I picked up when I was in China. Carbon steel, although they will rust if you don't take care of them, they are great at taking a sharp edge, which is why I started going for this type of metal in my knives. They are also NOT shiny and polished like the ones I received. I have the Shun Blue Steel, which are probably the best knives I've owned, I'm not comparing these to those, you can't do that.Very disappointed that these are stainless. Tremendous- best knife value on the planet!
I was shocked at the quality of this knife when I unwrapped it, visually and functionally. It is in the top 5% in out of the box sharpness for all the knives I have ever purchased (dozens, including some expensive ones), and the blade is beautiful. This big beautiful beast blows away it's metal handled No. 1 cleaver counterpart, also offer by the wok shop, for about half the price. It's close to the quality of CCK cleavers (I have their small and large slicers) at a small fraction of the price.Buy with confidence, and enjoy. It's the only knife you need, versatile and excellent.

Nice Cleaver for the price
Nice Cleaver for the price. The spine and heel "edge" were pretty rough; enough to irritate my hand under light use (using the pinch grip). This cleaver is fairly thin (although not as thin as the wok shop vegetable cleaver) and begins the taper halfway between the spine and edge.

Time to make the donuts
Stainless steel, and reasonably sharp, well-balanced (I prefer heavy knives and this feels medium to light honestly). The raw wood handle needed a touch of linseed oil.
