Cooking at the Kasbah: Recipes from My Moroccan Kitchen

Rave review
I've had nothing but raves for the meals I've made from these recipes. I particularly like cookbooks with photos that make your mouth water, like this one. For me, there is nothing better than cooking something you really want to eat yourself. Every step in the process seems fun, brings you a little closer to your goal, and in the end, leads you to share your creation and your own desire for it with friends. If you've yearned to cook with protein, veggies, and fruit and nuts in combination, Moroccan cooking is the place to expand your horizons.Be aware that you'll need a few exotic ingredients--preserved lemons, for instance, which you can e-order, or if you're into putting up your summer garden's harvest, are a breeze to make a few weeks ahead. You'll need saffron, ginger, cilantro, fresh olives and Hungarian style paprika to get going. But if you have a good Dutch oven, you're all set in the equipment department. The recipes themselves could not be more clear and straightforward. I cannot recommend a cookbook more highly. It will change the way you think about what you can create in the kitchen.

The Top Moroccan recipe cook book
Kitty Morse is probably the primary Moroccan cook book author and well deserved. She still has a home in Morocco and leads a cooking tour once a year. The book contains all types of recipes to have a true diffa (feast) and uses ingredients generally available (you should make preserved lemons). The instructions are excellent and the tastes are remarkable. My wife and I have done a number of dinners, including the breads and our guests uniformly agree they are superior dinner parties. A great wine to serve with the bastila is either a spat lase or aus lase. This book is a standard. Monte K. and Anne R. Marshall of Sarasota, FL

Not Very Useful
I bought this cookbook used for a couple bucks. I'm glad I didn't buy it new or else I would have returned it. The book has very few pictures for the recipes. If you're like me and you prefer seeing a picture of the finished dish for each recipe then this is not the cookbook for you. I believe pictures are critical when you are developing a cookbook of exotic cuisine for the western market. It's kind of hard to correctly present a dish that is entirely foreign to you unless you have a clear conception of what the dish is supposed to look like. It's not like a crockpot cookbook where you can get by without any pictures at all. Also, this book contains many Sephardic recipes which I am not interested in whatsoever. If I wanted a Sephardic cookbook I would have bought one. These additions are likely due to the fact that the author herself is Sephardic. There is a section dedicated to tagines but the recipes do not include the use of an actual tagine which I found to be disappointing. However, there are a few decent recipes and the scant pictures that are included are of high quality. Nevertheless, this does not justify the purchase of this book. I bought "Easy Tagine" by Ghillie Basan which, while not perfect, is definitely superior to this cookbook for those who are curious about Moroccan cuisine.

I had this cook before and love it. I was missing so many pages from my first one which is still on my shelf. I use to rip out the recipes and place them in my pocket when I go to others homes to cook, the dishes always come out perfect.

Clear instructions, nice photos, great recipes!
When I returned from Morocco recently, I wanted to try to make some of the food I’d experienced there. So far, I’ve made 3 recipes and loved them all.

I enjoy making the dishes from this cookbook
This is my second copy of this cookbook. The first copy was lost in a move. I enjoy making the dishes from this cookbook. I love cookbooks where the authors personality comes through.

A disappointment to my mind.
The only recipe I found useful, Tagine Bil Berkok, very mild. I did not find these recipes great, could have done better with the glorious spices of Morocco. Chicken B’ Stila, good. Disappointing to me who have visited this country and loved their cuisine.
