Q: Is there garlic or onion included in the ingredients - what are the spices?

No garlic or onions. It has organic caraway seeds and black pepper only.

Q: is this really crunchy?

Yes. It's crunchy, perfectly seasoned and you would never know that there is no salt. Just ordered another jar today because I polished off the last one for breakfast. It's just that good. It's a staple in my fridge and I get grumpy without it.

Q: How long will this keep in the refrigerator after opening?

I don't know the limits as to when the kraut actually would become spoiled as I have consumed mine within about a week of opening a jar. It is certainly still fine at that time, though the flavor is most vivid when first opened. And it's only the portion of the product directly on top that begins to loose some flavor. Digging a little deeper in the jar the flavor remains unchanged from when freshly opened. Hope this is of help!
