Best knife I've ever used
Glad I took the chance on buying this knife. I'd been using those cheap knives that come in a block. You can sharpen til the cows come home as they get dull easily. This knife has a good weight, feel and cuts beautifully. I spend lots of time in the kitchen cooking from scratch. Wish I'd purchased sooner, but grateful I found this. Fits my hand comfortably. No more pain when cutting. Is large enough to cut a pumpkin or watermelon easily. Should be washed and dried immediately for best condition. Although I had an exhausting day and left it over night once, but it still cleaned up nice in the morning. Not taking that chance again. These are carbon steel.

Excellent quality at a very good price.
This is the second Mercer knife that I have purchased from Amazon. I was sick and tired of stainless steel knives that I simply couldn't keep sharp, so I bought a 10" Mercer carving knife four years ago for carving roast beef. Four years later it is still razor sharp. This time I bought an 8" carving knife. I absolutely love it. It is just as sharp as the knives I bought from the German knife manufacturer in Solingen. It is well balanced, and solidly built. The price for the Mercer is about 1/4 of the price for the similar German knife. Absolutely great value for the money. I would give the German knives about 4 and a half stars. They are quite excellent. But if I could I would give the Mercer 6 stars.

Great knife
This is the first time I've purchased a chef's knife that wasn't part of a set. I was impressed by the balance and weight. I put it through its paces the first day I had it and most days since. It has stayed sharp with very minimal use of honing steel.

Good choice for money
Profesional chef, works great as your beater chef knife, or home chef knife. Would recommend.

Knife came in scratched, but good knife, tang is bulky had a rubber cover, blade is stiff and hold its edge pretty well, sharpen every 6 mos. good weight to the knife balanced feel from front to back.

Great knife, super sharp
This may be the best knife I've ever bought. Nicely balanced, good handle, and very sharp. In fact, be very careful with it until you get used to it, because it is so sharp.

Cannot say enough about this knife. Have been wanting a good sharp Chefs knife for a long time and when I look at them all, i because more confused than ever based on the wide price ranges. Then I took a couple of Cooking Classes at the Cordon Bleu School of Culinary and they used this knife. I was instantly sold. Best all purpose knife - I love it!!
