Are you wondering about coconut flour?
Milliard Organic Coconut FlourCoconut flour looks like, feels like, has granules the same size as white flour. But it smells like coconut, which is very attractive to most people. Otherwise, you might think that it was ordinary white flour. It is used in recipes like ordinary white flour. Measures the same and mixes using the same methods.Only regular white flour will raise nicely when mixed with some yeast (bread) or baking powder (biscuits etc.). 100% whole wheat will not do that and neither will coconut flour or oat bran flour, and most other flours. There are two ways to overcome this. One way is to add gluten powder (which is sold on Amazon). But some people have to or just want to avoid gluten. Most store bought whole wheat bread is made with gluten powder mixed with the whole wheat flour, so that the loaves will rise and therefore sell much better in the stores. The other way is to mix normal white flour with the other flour, such as this coconut flour. This works for us at our house, we mix white flour and coconut flour half and half. White flour rises but does not have the health benefits of whole wheat, coconut, oatbran, spelt, rice flour, or sorghum flour. White flour is just pure carbohydrates which most people get too much of anyway. It is made by removing the wheat germ from the rest of the wheat.Because of the aroma, your baked goods will have a mild coconut taste which most persons will enjoy in most bake goods, including bread.Mixing whole wheat or coconut or oatbran flours or other flours with white is a good idea, healthwise. Especially for your daily bread or breakfast biscuits and muffins.Oatbran is one of very few foods that can remove plaque from artery walls (check the legitimate medical sites, it is the truth).Whole wheat is especially high in fiber, which is a good thing. However it is a mild laxitive (all fiber foods are) which is good or bad based on your situation. You can regulate the effect by using more or less in your flour mix.We use a lot of wholewheat, oatbran flour (oatbran cereal), and coconut flour and bake daily. We always mix one or more of these with white flour.

A good low carb choice for your diet
Being on a carb restrictive diet, I needed something to substitute for wheat flour. While coconut flour can't be used in the same way, there are many foods that can be made with it.For the first time in months I was able to enjoy a peanut butter cookie.1 cup natural peanut butter1 cup erythritol (other sweeteners will be a bit sweeter)1/4 cup butter softened1/4 cup shortening1 lg egg1/2 tsp baking soda1 tsp sugar free vanilla extract1/2 cup coconut flourCream all ingredients together except coconut flour until smoothAdd coconut flour and mix until combinedBake at 350 for 13 minutes. Let cookies cool on the baking sheet until firmed up, about fifteen minutes. The internet holds many other coconut flour recipes. This flour was a very good price and is a very good, fresh product. Recommended.

Delicious, you can eat raw
This coconut flour is delicious! It is sweet though. I am using it with oat bran to make muffins and I don't add any sugar, just a bit of cinnamon and it tastes delicious. Also I use a tbsp on plain greek yogurt to give it a little taste and I'm living it.The 5lb bag is a lot, so you're not cooking/baking everyday, maybe you should consider buying a smaller quantity, because you dont really need a lot of it in your recipes. I'm saying this because I had to change my diet because of diabetes and looking for healthier food alternatives I'm still adjusting to portions sizes and stuff.

This is a BIG BAG that seals poorly
I bought it because I needed it for some keto recipes. I did not expect such a monster bag, but hence that can happen in internet shopping sometimes. The flavor is good and cooks properly. The only big con is the bag seal is very poor. I had to pour it into a separate container which was a pain since there was so much of it. It'll likely last me a year at least.Keep an extra container or heavy duty gallon ziplocks when you buy this.

Pure coconut, great flour that doesn't need to be cooked.
Pure coconut, great flour that doesn't need to be cooked. Plus a mild coconut flavor that I like. No additives. I mostly use it in drinks, such as smoothies. It adds flavor and helps thicken. Same for sauces, such as asian sauces that call for some coconut anyway. I skip the cornflour and use coconut flour. Sprinkle some on deserts, sometimes just eat a spoonful -- it's cooked. Made-bagged in USA, sourced from Philippines, etc. with true quality control & standards.

Big bag
This is my first purchase of coconut flour. 5 pounds is ALOT. I am finding different ways to use it and it is an excellent product. Soft flour that mixes easily. I have had no problems with it. It isn't super "coconut-ty"

Zip closure is crap (you have to transfer it to container), but product is great
Tried it for baking, I used it as substitute for regular wheat flour 1:1, but it was huge mistake - coconut flour turned out to be liquid absorbent, so cookies went dry. I recommend use it like 0.5:1 instead of 1:1 or to use 0.3 part of coconut flour and mix with half part of regular wheat flour.Taste is great - mild coconut.

A Learning Curve... good stuff.
The product is of fine quality. It smells like coconut flour should. For new users, there is a learning curve I have not quite handled yet. It does not replace flour straight across. It is very fibrous and grainy. I tried pancakes, but it was not very good. We do like adding it to pancake mix. It bulks them up and they stay with you longer. We are happy with the quality and our purchase.
