Saffron (kesar) is obtained from the stamen of a gorgeous, purple flower called Crocus sativus. The Saffron flower produces about three stamens each year, which must be plucked once a year by hand very early morning. The stamens of about 200 to 240 flowers are needed to produce a gram of high quality Saffron. - The way you pluck saffron stamens, from where you cut them, and how you dry them makes the difference. That is how there are several grades of Saffron. The highest grade of Saffron is called Negin saffron (meaning jewel in Persian) . It has the highest aromatic and coloring capacity. Jewel is followed by Sargol and then Poushal in quality. - Saffron has a strong, exotic aroma and a slightly bitter taste. It is used to colour and flavour many Mediterranean and Eastern dishes, particularly rice, fish, and sweets, and English, Scandinavian, and Balkan breads. Saffron is traditionally used to give strength and heat to the body. It is also a famous anti-depression herb , able to create a happy and jovial mood. Apart from that, it is one of the ancient medicines used in Ayurveda, Unani medicine and Chinese medicine to treat many diseases including diabetes, skin and heart diseases, memory impairment, and low vitality. Saffron is also used in beauty products as it improves the softness and glow of the skin. - Another use of saffron is in pregnancy .
