how does one extinguish the flame on this stove?

I keep seeing people say you can't extinguish alcohol stoves.... YES YOU CAN! You blow them out like a big candle. Easy stuff.

can you use a trianga burner in this?

No, the Trangia burner is slightly too wide for this stand. I have only found that the Evernew titanium burner is the only one narrow enough to fit in it.

Does the Esbit alcohol burner fit in this pot stand without having to modify the pot stand?

By the time you file the Esbit stove to fit this stand it will most likely leak. This stand really is exclusively for use with the Evernew Titanium burner.

Is this merely to hold the pot? ... is it also a wind screen?

It not only holds the pot but it works is an excellent when screen.
