Great for Pickling
Works great and the low profiles makes it ideal for foods that need to spend time in the fridge whilst pickling.

Tsukemono Workhorse
Love this and would get the bigger one as well if I had space for it. Have been making small batch tsukemono (so far three types: napa cabbage, daikon, and cucumber) successfully since I got it and it's held up well. It's really easy to get the hang of making your own and cheaper than going out for it. If you want to try your hand at Japanese pickles, you can't go wrong with this little guy.

Does the job
My wife makes all kinds of different tsukemono with it. Only thing, the clear container gets stained.

Take your cucumber salad to the next level
Honestly I don't know why more people don't use these vegetable presses. I use this mainly for pressing the excess water out of cucumbers when I want to make either pickles or cucumber salad. It's amazing how much crunchier the cucumbers get after spending a night in this thing. Mix some salt in with your sliced cukes and screw down the top piece. Easy peasy. Drain out the water a couple of times and screw down tighter. Some folks keep their veggies in here for a couple of hours. I usually keep them overnight or 24 hours. I really doubt you can overdo it. It's just so simple to use. Truly simple. And then results are fabulous.BOTTOM LINE: great gadget for pressing vegetables to get them crunchy. I mainly use it for cucumbers and zucchini because that's about the extent of my vegetable joy, but I am sure there are other veggies that would benefit.

Great Little Pickle Maker
This is a nice little pickle maker. It's light and easy to carry, not too big so it can sit on my kitchen counter without taking up too much room, but big enough for my needs. So far, I've only used it to squeeze out the liquid from salted cabbage. It does a good job, however, I am very careful about not cranking down the press too quickly/vigorously. It is plastic so I don't want to push it too hard and break it. But, so far so good!

Good for fermentation
It is good for fermentation. But it is so wide it is hard to open. So it has only been used once.

Terrific for making pickles
Love love LOVE this tsukemono press. It is spring loaded which helps achieve the right pressure for pressing your veggies. It creates the perfect texture without having to add a crazy amount of salt to draw out moisture. I have made cucumbers, shibazuke, and umeboshi in this press and they are all spectacular!

Serves its function
Turned out to be quite useful in making pickles although I was a bit doubtful at first.
