The pan is made of carbon steel (aka polished steel, or acero pulido), which is ideal for paella since it conducts heat quickly and evenly. The pan is thin but quite rigid and durable, with a hammered dimpled bottom. The handles are made of steel and painted red. Carbon steel is the traditional material for paella, and some paella devotees feel that it enhances flavor. As with any raw steel pan, it requires some care: you must dry the pan right after washing it and then rub the inside with a little vegetable oil to prevent rusting. If the pan does rust, a few passes with steel wool takes it right off.

The perfect paella pan
I have two 18" Garcima pans but this is the one I really need when making paella for a group of six to eight people. I love it because it gives me plenty of room for lots of rice, shrimp, clams, sausage, etc. It also allows me to spread out the rice in a thin layer to achieve my soccarat. Once seasoned it's easy to clean and hang in my basement rafters for the next cookout.

Good quality
Used twice and it worked well both times. Handles are very sturdy which is nice when moving a hot pan from the grill back to the kitchen. Cleanup was fine. Coated with a little cooking oil and stored wrapped in newspaper. Nice to see a good quality product at a reasonable price.

I was disappointed, thinking " this is supposed to be stainless ...
I am actually using this as a perfect-fit lid for my solo stove campfire fire pit. Fits perfectly. However, it rusts. I was disappointed, thinking " this is supposed to be stainless steel!". My bad. It is not. It is really solid and as a Paella fan and home cook, this is a good pan. I will likely get another ...for cooking Paella.

Good Value!
This carbon steel, 20" inch paella pan fits perfectly on my 22" Weber Grill. Large enough to make paella for 10 or 12 people. The carbon steel cleans up easily with a short soak and a sponge scrub, but be sure to coat the inside of the cleaned pan with vegetable oil and warm lightly after washing, then wipe off the excess oil for storage. It should last many years, developing a fine patina over time.

Great Paella pan
Great Paella pan. I had to use it over a gas grill as it didn't fit on the range. I had to rotate the pan on the grill every so often, but it cooked evenly. Definitely cover with a bit of oil after washing as it will quickly develop a bit of rust if you don't. I wish there were an accompanying (properly sized - see my other review) cover for it.

Perfect for large gathering
I already had a 16" paella pan but needed this 20" size for a group of about 10 to 15 people. Worked out great. I highly recommend getting a gas paella cooker for these bigger pans as they don't work so well on a regular cooktop. You'd need to use two burners and rotate the pan a lot while cooking. Dedicated paella cooker makes it much more simple and enjoyable.
