'BEST BY 30-06-2023,' First Cold Pressed and Delicious!
Even though the EDAFOS bottle does not list the harvest date, Amazon legally states it as "...Harvest for 2021!"Also, not on the label is DIO-GR-BIO-01; therefore, is it certified organic? On November 27, 2020, Ancient Foods (seller) mentions, "Yes by DIO-GR-BIO-01 standards. Their standards are higher than the USDA Organic standards." See the Q&A on this page to view their reply. The Protected Designation of Origin (PDO) seal is definitely on the label. Very important. EDAFOS is from a PDO in Crete, Greece; it is an instrument "...created by the European Union to protect Geographical Indications within the European framework."While most California EVOO brands lack that necessary bitterness, EDAFOS certainly has a welcome, first kick. The taste is a tad richer than FRANKIES 457 because of the bitter instant bite; however, it is still on the lighter side. Nevertheless, it has a good but light balance of bitterness and spiciness (that hits the back of your throat).I am still searching for that much heavier but yummy oil. Look for my other olive oil reviews.

The wonders of Crete
Cretan olive oil has always been a favorite in this house ever since we first picked up a bottle a few years back, and after the pandemic limited our ability to obtain it locally, we searched online for a provider. It has proved to be a happy outcome from this unhappy time, because our search for Cretan olive oil brought us to Ancient Foods, and this is the most wonderful Cretan olive oil we've ever had the pleasure to enjoy. It tastes so fresh one forgets it comes from half a world away, and its nicely balanced complexity combined with a slight peppery bite makes it a great olive oil for pretty much anything we cook- although we reserve Ancient Foods' Keros olive oil for the dishes that ask for a slightly lighter, more herb-like touch. We keep a bottle of both of Ancient Foods' olive oils prepped at all times in our kitchen; they are used daily and indulgently. We can't imagine cooking without them anymore.

A whole different level
This early harvest 2020 EVOO (for 2021 enjoyment) from Crete is truly on a whole different level. The smell, the flavor, the consistency will change the way you think about and understand EVOO. Rich and peppery, it is all you need to add to any dish to make is extraordinary. It may be obvious, but since it's in a 3 ltr tin, you will want to decant a smaller volume for daily use. I use a brown glass beer bottle (label steamed off), with a typical bar style speed pourer. Be sure to keep it out of direct sunlight and in a cabinet where there is no adjacent heat. May seem like a lot to pay for olive oil but oh boy, is it more than worth it.

Really amazing taste and perfect acidity....
Ancient Foods makes 2 varieties of EVOO....Edafos which is a lighter, coastal variety of olive from Crete, and Keros which is from the mountains in Sparta and a little more acidic but also amazingly good. We go to our village in Greece every year and both oils tasted just like the first press that comes after harvest. Edafos is amazingly light and flavorful. We use if for almost everything including cooking and some frying. I figured both would be great bc If you go to Ancient Foods website, you will also see a lot of top chefs in DC area exclusively use this brand. Including Michelin Star Nick Stefanelli (Masseria, Officina, Philotimo). I highly recommend both varieties and you will definitely like the nuanced flavors of both.

There are much better olive oils at better prices.
I'd thought I give this a try because the pictures and product description lead me to believe that this is a premium product. This tastes like cheap grocery store olive oil. It even has that burn in the back of your mouth that usually comes from bottom shelf "blended" olive oils. Get Mr. Papous or Kirkland EVOO from Costco, both are better and cheaper than that this garbage.
