Good value (8” Granton edge chef knife)
I’m a big fan of Mercer in general, as I consider them to be a great value. Same steel as a much more expensive world-famous brand, but a fraction of the price. I cook professionally, and use Mercers because they perform well, are easy to sharpen & I don’t worry about them being stolen. IMO the efficacy of a Granton edge makes very little if any difference in terms of material adhesion, but I figured I’d try it. Overall I’m very pleased with this knife after using it daily for a month or so. With that frequency of use, the edge does require honing often, but IMO this is typical of western-style knives. Would definitely recommend as a kitchen workhorse.

Worth the Research!
I'm a new home cook in a small Manhattan kitchen, and I'm enjoying the search to find high-quality items to make food prep more enjoyable.I didn't start looking here on Amazon. I started externally, reading through 'top 10' lists from reputable sources, trying to establish an idea of what knife features would meet me where I am in my experience.Keywords included 'granton', 'full tang' and 'forged', along with 'balance'. I came pretty close to Misen knives for this reason, but they didn't offer the granton edge that would play well with my current needs.I wasn't familiar with the Mercer brand until this search, but I ended up taking the plunge with 3 of their knives...this one, the 10" chef's knife and the 8" bread knife. All of them are a 10/10, and have made my culinary adventures more enjoyable.If you're into the meditative nature of cooking as I am, you will enjoy the ease and balance of cutting with this knife, especially if you use a pinch grip. Do as they instruct...avoid the dishwasher and clean it carefully in the sink.This was a satisfying purchase and I recommend it wholeheartedly to you.

Stays sharp. Needs blade guard for storage
Great knife to have in your kitchen for the price. Holds an edge, comfortable handle, easy to clean. Wish it came with a case.

Great for rock choppers
Very nice quality blade and balance for the price. Comparable quality to Henckels/Wusthof. Comfortable using standard pinch grip. If you are a rocker style chopper it has a pretty pronounced belly to make it perfect for you, and can perform standard slicing tasks with aplomb. If you are a push chopper or straight up and down it is not for you.

Excellent quality knives
his is my third purchase of this brand of knives and once again I'm so impressed by the performance and quality of this knives. The other two I own are the Nakiri Vegetable Knife and the Wavy Edge Bread Knife.1) Perfect balance2) Just the right weight3) I don't need to sharpen them often4) The Forged edge stops whatever you are slicing from sticking to the bladeExcellent, excellent product.

Our favourite chef’s knife.
Our hugely expensive German chef’s knife snapped in two while slicing cabbage so we replaced it with the Mercer which is far less expensive.Much to our surprise, the Mercer Renaissance is equally good, and outstanding value for money. Why spend $200 when this is available…more expensive is not always better.

Good value for money in a professional knife
Bought this to replace a chef's knife from a well known consumer brand, which I felt had a thin, weak blade that often got nicked or went dull.Not a professional cook by any means, but for the price this knife has been a significant upgrade and is a great all-purpose chef's knife.

Very Sharp
Bought this as a gift, hopeful it was a a good as the reviews! It lived up to the expectations, it is now his favorite knife. Does need to be sharpened every now and then but it is a great knife, especially once you take the price into consideration!
